Advice on Brussels part II

Thanks for the eating advice...now on to drinking. I have spent many days in Amsterdam drinking the time away at In de Wildeman, Cafe Belgique, Cafe Hoppe, and others. So other than the really expensive places on the Grand Place, what are the best places to drink in Brussels? Looking for extensive bottled selection (things you might not see elsewhere), awesome vant vat, and would even spend an hour or two in the best gueze/lambic blenders. Opinions? Thanks so much!
