Sweet Sour Beers

I hope it's not news to anyone that the Oud Beersel beers are made at least in part by Frank Boon, and have been for quite some time. Frank Boon, as others have pointed out, chooses to use a cultured yeast and pasteurize the 'lambik' and 'Geuze' he brews. Still he claims to be a 'traditional' lambic brewer and blender, and a lot of people seem to accept that assertion despite the fairly obvious sensory evidence to the contrary.

A lambic fermented naturally and fully over time by wild yeasts cannot be sweet. The wild yeasts will devour virtually all the sugars in the beer in a fairly short time, leaving nothing sweet whatsoever. The only way to get residual sugars, and sweetness, in a spontaneously fermented beer is to kill (pasteurize), or filter out, the wild yeasts before they can finish gorging on the sugars. If you taste so much as hint of sweetness in a 'lambic' beer, it was not made in the traditional way.

You're absolutely right that it's important to taste and compare these kinds of beers side by side. It becomes glaringly obvious who's doing things the traditional way, and who's not.
