I stayed on the 2nd and 3rd of this month, and I couldn't agree more with your assesment on the food. Our meal was one of the best of our two-week stay, and Tom is indeed a great host. The service also has their A-game on, very attentive and helpful, unlike most of the European waitstaff we encountered. (I think when the gratuity is built in you get indifferent service, but this is for another thread...)

The central location in Brugge is superb, overlooking the canal as you mention, and also a stone's throw from Garre, an excellent small bar featuring their own tripel draught. (Does anyone know who makes it?)

The other great meals we had were at Hommelhoff in Watou, breakfast at St. Bernardus, and Cafe Esplanade in Paris; T' Spinnekopke in Brussels was the biggest disappointment, out of many listed beers and service/food was below average.

Anyone interested in good beer is making a mistake by not choosing Erasmus as their hotel when in Brugge.

In my mind Brugge is the star city of Belgium. They need their own beerfest.
