Saison carbonation levels
I know it's on the high side, but what carbonation level in volumes of CO2 do you target for your Saisons when bottle-conditioning?

I'm not sure about columes of CO2 but i used 5.5 oz of priming sugar for a 5 gallon batch. Not sure if that answers your question completely

Did you have a full 5 gal. volume and were you happy with the final carbonation?

Ferment temp. is also part of the carbonation equation because higher ferment temps. mean less CO2 staying in solution in the beer before bottling. Normally I don't worry about that much, but with the higher temp. fermentations for Saison, it must be more of a factor than usual.

And when the bottles are primed and capped, place them somewhere that is quite warm. Saison yeasts needs high temp. not only for primary fermentation, but also for re-fermentation in the bottle. Learned that the hard way (that is, my bottles took forever to fully carbonate at 70F)

I aim for a carbonation level above 4 volumes of CO2. I seem to remember using 6.5 grams of sugar per 750ml bottle.
