Least fusely strain
Hello--this is the first time I have posted to this board but I have read it a fair bit. There is lots of great information here.

I am wondering if some people who have experience with a wide variety of Belgian yeasts can recommend a general strain that would work with many Belgian styles, and which is a low fusel producer even at higher temps (mid 70s). I had a good experience with WY3552(?) Ardennes in terms of low fusels at very high temps, but the beer (and also La Chouffe itself) doesn't have the profile of yeast-derived flavors I'm looking for.

WY3787 seemed to produce more fusels for me, and while I can always look to reduce fusels by changing something other than the yeast, I have heard comments to the effect that even Westmalle tripel (which I unfortunately have never tried) can be pretty alcoholic-tasting. And the commercial yeast charts/descriptions in Brew Like a Monk seem to suggest 3787 is a little more prone to alcoholic flavors than other yeasts.

In the absence of any guidance I will just try a bunch of strains over time (starting with WY Canadian/Belgian), but I'd certainly appreciate any help that will shorten my search. Thanks,

Matt - This was in an old BYO article -

In general, Belgian yeasts and wheat-beer yeasts are good high-temperature fermenters. A bit of esters are expected in these beer styles. In addition, according to Dave Logsdon, from Wyeast, "When temperatures increase above 78 F, a significant increase in fusel alcohols is likely for most yeast. Belgian yeast, wheat beer yeast, and wine yeast appear to have lower levels of fusels when fermented at the higher temperature range."

Here are some strains that Mr. Logsdon and Mr. White recommend:

Wyeast 1332 Northwest Ale Yeast

Wyeast 1214 Belgian Ale Yeast

I've had good luck with WLP500 relative to low fusel alcohols and high gravity beers (up to 13%). However, I usually keep my temperatures below 74F for Belgian strong ales to avoid too much "hot alchols". If I know the fermentor will exceed 75F, I rely on Saison(WLP565)or Wit(WLP400)yeast strains; always clean. Don't ever use WLP099 in a hot temperature situation or for beers above 8% abv. Whew! This super high gravity yeast will make soooo much hot alcohols that your tempted to dump the batch.
