Brewing Lambic
So, for some crazy reason I've been tossing around the idea of brewing a lambic. I don't know why. I guess I just seems like a cool project. Not sure if I want to do a fruit lambic or straight unblended. The other day I did find that Cantillon has brewed a lambic using FRESH CASCADES, and has plans to use FRESH AMARILLOS!!

I've been looking at Wild Beers during my toilet time for the last couple of weeks. I really don't want to mess with a turbid mash. I found tonight that a cereal mash would work. That made me feel good about it. Form what I gather, there is no secondary time. Right? Primary for a year or so the bottle?

Don't know what I'm look for with this thread. Maybe just some of your experiences and such.

Tom, try the SEARCH feature, you'll get loads of hits. Several here are no strangers to lambic!
