bottling wile yeast brewS?
So i made a belgian single fermented with a big ass starter of a crazy 9 strain blend of funkie bugs given to me by a friend. it has been in primary for about 2 months and seems pretty "done". activity is pretty much stopped and the taste and smell is brilliant! (i know most people say to wait 6-12 months)

my question is, would it be safe to bottle? i need to check the FG, but figured if it was @ 1.000 or close then it should be fine. I was then going to cold condition it to crash any activity (if any) still going on. If i do this, should I add servomyces when priming? and should I prime with the normal ammount of priming sugar?

well maybe not that low, but the friend that gave it to me said the last batch he did with it gave him a FG of 0.996!
