Claussenii in secondary
Hi, this weekend I am transfering a Saison to the secondary and adding Brett. Claussenii. I am debating leaving it in the secondary for the summer or only for 2-4 weeks and then bottling. I assume that the Brett. will do it's thing either way. Just wondering if there is an advantage one way or the other. mikehahn

p.s I read the transcript for the Brett. meeting. That was cool Steve.

Actually you definitely don't want to only allow the Brett to work for 2 to 4 weeks. In order to safely bottle, without creating bottle bombs, you should give the Brett at least 4 months if not longer.

I could see you bottling after 2 to 4 weeks, but only if you were planning on drinking the beers relatively quickly. Remember the Brett strains will slowly munch on all availible sugars over a period of many months, so if you bottle early the beer will slowly get more and more carbonated.

You can bottle after a month, just use heavy bottles and cut the priming sugar by 10% or so. I just had a sample of an Old Ale spiked with White Labs Claussenii brewed by Kuhnhenn Brewing in Detroit and it was amazing. They've had it in secondary for a year. Strongest, ripe pineapple aroma ever.period. Incredible.
