Hey all. I'll be brewing an Oerbier style beer this weekend. I have a couple of sour cultures lined up, but I'm not sure which yeast to use during first fermentation. I purchased Wyeast 3942, but haven't seen much talk about it on this board. Has anyone used it with much success or know of a better yeast to use for DeDolle?

Old Oerbier or current? Those guys were made famous with the likes of us because of their pre-2000 sour brewing. They lost a lot of fans when they started fending for themselves for yeast. Then again I'm sure they gained a lot too. Anyway, do you mean the hayday of original Oerbier or todays version?

Well, I know it's not the old version... I am also adding brett and lacto to the secondary. I'm not really making a clone, but I wanted to get around the "style."
