Wyeast 3463
Anybody have any experience with the Forbidden Fruit yeast (Wyeast 3463)?

I just tried a wit with it and it fermented really fast and didn't give me a lot of krausen. When I've used WLP400 the krausen was huge and took forever to fall.

I also wanted to give part of the reason for my concern. The Wit tastes pretty good (a little tangy that I think that's from the grapefruit peel I used w/ florida oranges to simulate curacao). I want to re-pitch the yeast for a higher gravity saison, but not if something is off with this fermentation.

I've used it to make several styles and it is a good fast fermenter. Everything sounds fine on your end.

How is this when used in double style ale? What flavors can be attained from this yeast at different temps?
