Old hops for Berliner Weisse?
Hey guys. Dan and I are making our version of Steve's Berliner Weisse with the Brett claus. tomorrow. We have some 6 year old Hallertau hops in the freezer, but I wasn't sure old hops are appropriate for this style. Should we use fresh ones instead? Obviously we're only shooting for about 7 IBUs, but I wasn't sure we should try the old ones and get a cheesy quality to the light beer. Thanks!

If you kept them in the freezer for the last 6 years they won't be cheesy - which is not appropriate for the style anyway so they might do fine if they smell OK still. You'll probably have to use more than expected because of the age and decreases alpha units.

Cool, thanks Cisco. We'll give them a sniff before we start brewing tomorrow and get some new ones if they don't smell too good.
