Preservative qualities of beer yeasts
I've been wondering whether certain yeast strains are better or worse for bottle conditioning and cellaring. I know live yeast in general helps preserve beer for the long run in the bottle, but, all other factors aside, in ideal conditions, does the specific strain have an affect on how a bottle of beer will stand up to time? Not sure if there's a scientific basis for this or whether this is just a question to ponder over but it has captured my curiosity.
