cleaning fruit for secondary
I am hoping to add cherries along with a Brett culture to my secondary soon. If I use fresh fruit, what is the proper way to clean them before adding?

I just give them a rinse, throw them in the freezer for 24 hours, put them into the secondary fermenter, wait a few hours for them to defrost, then siphon the beer on top of them. You won't have to worry about sanitation since your beer will be teaming with wild yeast already. The freezing helps to break the cell walls and skins down which makes the cherry flavor extraction faster.

I'm sure other people do it other ways, but this is the way i do it and i think i get good results.

I like the freezer method too. I agree that it makes the fruit extract better but my understanding was that it also has a sanitizing effect.

Actually once I was going to add cherries (orchard picked) that had been in the freezer for a while. I thawed them and discovered a decent amount of juice in the page. So I just added the juice and the wife made a pie. Big time success on both fronts!

No cherries anywhere...October go figure. so I've got raspberries in the freezer right now.
