Inoculated wood cubes for sour brews
So it has begun.....so inspired from Vinnie's wood chips....Al's Bugfarm inoculated wood cubes.

I drilled a bunch of small holes in the wood cubes to facilitate harboring the little critters. Then added them to a concoction containing the following: Fantome brett isolate, Jolly Pumpkin brett, RR brett, WL B. lambicus + bruxellensis, WY B. lambicus, WL B. clausenii, Fantome lactobacilli, RR lactobacilli, sherry yeast (S. fermentati). I'll add some Pedio once I get it next week or so.

Rather than dry out the cubes later on, I plan on keeping them moist and refrigerated.

So are you taking orders.....I'm completely serious, I would love to get some of those.

Sounds like bugs from the upcoming Belle Proximus( colaboration brew from DogFish Head, Russian River, Allagash, Avery, and Pizza Port) only better!

Belle Proximus? haven't heard about that yet...sounds cool.....that's a bunch of companies for one beer!

I second SAH's sentiment about orders. A bundled up box of Al's bugs and beasties would be beneficial to his buddies' beer.

But tell us to back off it is a bother.

Not a bother - its not $$$ to mail a few cubes.

There will be orders taken. Expect an announcement around the Holidays.....by that time there may be a few more mystery bugs added. MWHA HAHAHAHAHAHAHHA (evil laugh)

Hey now . . . Sign me up. I would be game for this. Al, thanks for bringing this up in another thread; I somehow missed this. If you are serious about selling or distributing these I would be most interested as well.

How long do you think these would last under refrigeration?

But that is really cool. A bacterial expert making his diabolical biological warfare on beer available to us commoners . . . Excellent!!!

So far each bug has been grown individually (pure cultures), then added to some homebrew (enough to submerged wood cubes) and refrigerated to soak in for a few weeks. After that soak period, I'll drain the cubes and leave moist or perhaps add some diluted media (haven't decided) for distribution (free). They should last for weeks refrigerated, if not longer (hopefully, I'll be able to check this concurrently!). In addition, I plan to plate out before distribution to determine some specifics.

A "rough" plate count has yielded 120,000,000 bugs/cube. That should do the trick. You mugs + N8 are on the list for distribution..........I have about 20 tubes of bug cubes! Details to follow soon.

That's great news, I have no idea how many bugs should be on a cube, but 120,000,000 sounds like a good bit. Very exciting Al B, never been happier to be a 'mug'.

Wonderful!

If I am able to get some of you cubes I think I am going to be brewing 20 gallons of sour brews; two 10-gallon batches, 1/2 of each soured with the Roeselare Blend and 1/2 of each soured with your cubes. Do a side-by-side tasting maybe in late 2010.

Al, even if I am not one of the mugs getting these, it is really generous of you to do this and make these available for people. Thanks a million. Or rather 120-million! ;)

OK, (yes Dave, you replied - you're in). I know Steve's busy - but I have N8s, Ryan's, Cisco, and possibly Scott R (sugar swap Scott R?)....so I'll send them Sat. The tubes are labeled with all of the critters.

Just to make sure I understand Al, the tube will contain oak cubes with a mix of all the bugs you emailed me correct? They aren't each individually 'packaged'?

Also, relating to the swap idea, should we start a thread for what we'll be using the bugs in? And the methods used?

I think it would be cool if we start a new thread with what people plan on doing and keep updating, then if in awhile it seems like there are enough folks who have something ready, we should do the swap.

SAH -

the tube will contain oak cubes with a mix of the bugs (tubes will be labeled with the contents). DUring the preparation of the cubes, I had indivually cultured the bugs in wort. Then I added each bug to a large jar with the cubes to soak in the refrigerator to ensure a relatively equal concentration of each bug.

FYI - I am quite pleased to hear everyone's enthusiam to try these out, and more happy to send 'em out - I just added mine to an ambient ale (started off ambient - now its a mixed fermentation I suppose).
