Reyeast for carbing dark strong?
Howdy,

I have a Dark Strong (well it wast supposed to be but my efficency was crap (54%) so now I guess its a dubbel!) - og 1.064, tg 1.011, ~7 ABV - in secondary for 4 wks @ 68F. I want to bottle carb 2.5-3 vol. and I'm wondering If I should add yeast with the priming sugar. I have a good 1/2 qt slurry of wy1762 from the primary thats been in the fridge this past 4 wks.

1) If I need the yeast, I'm thinking 1-2 tbs and can I just add it as is straight out of fridge.

2) For this ABV, time, and temp in secondary do I need yeast at all.

there are those that swear by ALWAYS reyeasting. However, a 1.064 won't have tired the yeast out much and one month in secondary will not have cleared them out of suspension.

I wouldn't hesitate to bottle as is. That said, you r method (1) would be fine too as long as it still smells okay.

I always add more yeast when I bottle. I use an 1/8 of a cup for average gravity ales and double that for high gravity.
