New Belgian Candi products?
Do tell about the 4 products out there now-

Clear? - Is it different that thick cane sugar syrup?

Amber? - We'll find something out about this in the sugar swap tastings...

Dark?- Is the the one we've been talking about and impressed with? More data coming in the sugar swap tastings...

Dark2?- What's this?

It appears that Northern Brewer has all of these these in their web store now... What's the story?

Crap. I just placed an order there yesterday.

I'm stupified. D2? Well THAT's a fine thing, and I've been looking for that black treacle too.

Re: New Belgian Candi products?
The importer mentioned to me awhile back that a new dark syrup was in the works, I assume that is what this is. Apparently different brewers have different specs that they have their candi syrups made to. The specs are apparently relatively secret, but he hinted that the D2 was more towards Westvleteren's specs... Needless to say I am looking forward to giving it a try.

Re: New Belgian Candi products?
Noticed these at my LHBS a couple days ago. The D2 is supposed to be richer, more roasty-burnt/chocolately/dark-fig-like. They also had some new moist blond and brown sugar as well. The label for those state the same flavor characteristics as the equivalent syrup, but more fermentable.

BPotts--

Which store are you going to? I so rarely feel motivated to get out to Keystone...

Re: New Belgian Candi products?
Just wanted to let you know that I am sending a 16 oz sample of the Dark 2 to everyone that is involved in the Sugar Swap. It was part of the original plan.

Best regards,

Brian

Mallace - Unfortunately, they were at keystone. Perhaps HSH has gotten some in as well, but I'm not sure- you'd have to call.

Re: New Belgian Candi products?
Brian,

I need to talk the owner of the homebrew shop I work at part time about stocking your products. Have you had any dealings with Andy at Beer at Home in Denver, CO? You can e-mail me off-line about minimum order quantities, etc if you like.

Thanks

Re: New Belgian Candi products?
I'll be adding some of the new soft blond sugar to a strong dark saison today, along with some of the regular dark candi syrup and some special homemade syrup >;) ...

Re: New Belgian Candi products?
I just got a standard Dark from Morebeer.com. This is before I realized my local homebrew shop, FH Steinbart's, had them.

These are all made from beet sugar like the Belgians, right? In the past I had carmelized different sugars in solution on the stovetop to get some darker flavors, but it was mainly for the maillard reactions, not color so much.

Thanks to Brian for importing these. I realized I had to get them when I saw them being added to the Chouffe-Brooklyn batch.

Re: New Belgian Candi products?
What differences have folks noticed in the D2 vs Dark syrups?

From reading lots of posts, it appears that 1 bottle of syrup is used in 5 gallons. From those that posted their brews pics in the article "DARK CANDI SYRUP COLOR COMPARISONS" - how did the beers taste when one bottle was used?

Can anyone comment on the the SG bump from using one bottle in a 5 gallon batch? I have been looking at the numbers and having a difficult time coming up with the values to plug into Pro Mash.

thanks!

Re: New Belgian Candi products?
Hey Brian

I just got the D2 in the mail. What a surprise gift!

somehow I missed this thread earlier. Thank you so much.

Can you clarify something? The bottle says 16 oz and 1.5 lbs.

Is this 1 lb of sugar in 1.5 total pounds of fluid?

"The bottle says 16 oz and 1.5 lbs.

Why do people complain that we havenít gone metric? Itís partly because we use ounces to refer to both weight and volume. The candi syrup is 16 oz (aka 2 cups) by volume, and 1.5 pounds by weight.

Re: New Belgian Candi products?
I believe that is 16 fl-oz (volume), but the weight is 1.5 pounds. If I recall correctly, the syrup gives 32 pt-gal/lb so one bottle (16 fl-oz) should be roughly equivalent to 1.1 lbs sugar.

Just got mine - actually it was wedged in the front door for a few days..........this stuff is really nice, alittle roasty, tons of mocha.

Thanks Brian. If you need some cultures (other than WL/WY), let me know.

Re: New Belgian Candi products?
It is my pleasure to send everyone a bottle. Any feedback you have will help us all. Thanks again for working on the Sugar Swap. I will send Fedex labels to anyone willing to send me a bottle of the finished beer.

Also, the bottle is 16 fluid ounces and has a weight of 1.5 lbs. If anyone has any suggestions regarding info that needs to be added to the labels, please let me know.

Al, I loved the last culture you sent, so I'll take anything you want to share.

Best regards,

Brian
