My Leap Year Brew, maybe
I brewed a pale(~10 SRM) higher gravity Oud Bruin on Feb. 29th. My intention now is to take 1/3 out and replace with new/different beer every year for three years. Then 3 years and 6 months in to bottle, then bottle condition for 6 months, and then drink on Feb. 29th 2012. Its kind of a solera process, I'm only doing 1/3 each time so I have almost a third of the original beer in the final beer as opposed to 1/8. The final addition will only have 6 months before bottling, so it will need to be fairly fermentable to make sure the beer is 'done' before bottling.

Any thoughts? Sound reasonable?

Thanks WitSok, I think so too. It is like a solera process, except eventually the whole thing will be bottled. It will be fun to decide next year what the next beer to go in will be too. Hopefully I'll stick with the plan and it will turn out great.
