100% Brett Porter update
Ever have the St. Peters Old-Style Porter? A traditional blend of vatted, stale, soured porter with fresh porter.

After brewing one (33% pale, 33% amber, 33% brown) and 100% WY B. lambicus OG 1062, it is becoming quite like this tasty porter. Aeration upon pitch was high (no acetic detected), was fruity, roasty, and dry initially (SteveG didn't pick out it was lambicus!). But it is now becoming more lactic - as I expected. The porter is about 1.5 month old. Not sure where this is going.....

You mean just since I was there? Wow, that's a quick change!

Never had their porter but I have had their pale ale, IPA (I think they have one...), and sout, all pretty tastey.... that porter sounds good.

Sounds like an interesting project so far.

Do you think the b. lambicus is producing lactic acid?

Re: 100% Brett Porter update
It seems to be - both lambicus batches I've done gains some acidity over time.
