I'm throwing some into a Mega Oud Bruin (OG ~ 1.115), how much did you use?

What are you souring with Mike? My Mega Red/Bruin/Sour thing will be a year old this may. OG was 1.13. Been a pretty fun experiment, I'm always surprised more people aren't trying things like this. It got stuck around 1.048 but I haven't checked in several months, right now it's tart, big sweet and sour thing going on, nice and bretty, oaky (from chips), and around 11% abv

How is the D2 color stability? did you use other dark drains in your dubbel?

Many of us saw loss of color during fermentation with the initial batches of dark candi sugar right after it was released.....

For example, I used 1.5 bottles in a big dubbel that looked good initially but ended up basically an amber orange color.

I understand that the D2 is much more dramatic in color than the reg. dark, however, I used a complex grain bill for my dubbel. I used alot of medium lovibond grains - amber, munich.

I built a strong dark with nothing but pale malt and sugar (1 bottle D2 and 1 lb cane sugar) and after a month in the bottle it is a deep dark brown like a dubbel.

Cool. Sounds like the D2 maybe more stable and enough to darken things up without lots of medium or roasted grains.

Maybe I'll have to give it another try.

I totally agree, the D2 is great stuff. I recently made a dubbel with a grist of simply 50% pils, 50% pale malt and then 1 bottle of the D2 in a 11 gal batch. I tasted it a day or so ago and it was very tasty and complex without being too dubbelly.

Not a big fan of the overly rich dubbels. As in, too much dark malts to where they are starting to cross the line into stoutdom.

Not that I dislike them, just have my preferences.

After typing this I went down and popped one of these Strong Darks. I just can't believe that this is just pale malt and sugar. That D2 is super complex and really really rich.

I highly recommend it.

I have a starter of Roeselare going now, Iíll do a Flanders Red, then use the cake from that to ferment the Mega-Bruin. Iíve got some other wild/funk starters around that I may add to secondary, and it may take a bit of alcohol/acid tolerant wine yeast or something to get the gravity the last little bit down.

I have a bottle of D2 and original Dark syrup. I also prefer mine less less dubbelly. :-) Did you use any other sugars? What was your SG, FG?

Here's my process:

50% pils malt

50%pale malt

1 bottle of the D2 added in the last 10 min of the boil.

1 lb soft blonde sugar

Styrian Golding and Hallertauer to 35IBUs

OG 1.080

FG 1.006

~9.0% ABV

Has anyone else bought a bottle of D2 that was all crystalized sugar in the bottom 1/3 of the bottle?

My bottles of D2 were liquid through out the bottle. Honey will do the same thing after a while. Just reheat it and the crystals will dissolve back to liquid.

N8,

Would you mind sharing your yeast and ferment temps? This sounds similar to the dubble and dark strongs I've made in the past. The D2 is awesome stuff!

I used the Wyeast 3787 High Gravity Trappist yeast for this one. Supposedly the Westmalle yeast. I fermented around 65F, and let it ramp up to 75F over about two weeks, then racked off the yeast and cold conditioned it for 3-4 weeks at 33F.
