Roselare
My good friend mtc was generous beyond a doubt. Hooking me up with two packs of roselare yesterday he now leaves me in a quandary. I am leaving the country for three weeks on Friday. What can I do with these packs to ensure their future utility? Will the fridge suffice or should I perhaps make a couple of starters, let them ferment out and then hold the yeast under the fermented wort?

I forgot to mention that FedEx was uncharacteristically slow and right at the height of the East Coast heat wave, so the packs arrived a bit puffy.....

does that change anything cisco? I'm a bit worried about viability

For what it's worth, I recently resurrected an '06 dated packet of Roeselare that has been in my fridge for nearly two years, and the starter smells and tastes just right.

The roeselare blend is VERY hardy and will survive for a long time. It never hurts to make a starter and store it refrigerated.
