spontaneous!
so after almost 2 years of seeing hydrometer samples left out for a few days kick up a krausen ive decided to do it with a 5g batch. from smell, i get a bit of sourness, probably acetic, and some phenol/clove. i plan on brewing a pretty simple beer with wheat and pils and a little bit of hops at beginning and end of boil, chilling to 75F, transferring to a bucket and leaving open (though i will maybe/probably put some cheese cloth over it to hopefully keep fruit flies out. thoughts?

Check the threads around ambient brewing - SteveG + MarkO have done some this and reccomend spotaneous stuff during cooler months (on my list for the late Fall I hope).
