aging on fruit and yeast question.
Hey guys,

I just racked a dark saison @ 9% onto some sour cherries and brett brux. Upon racking from my conical i ended up pulling a nice size plug of Dupont yeast over as well.

my question?

If i sit this to age for an extended period, should i have to worry about autolysis much? either way i know there is no way i could avoid having a slurry of Dupont yeast after adding the fruit, but just wonder if there might be too much or if the brett will keep things in check.

My feeling is that the brett (especially B. brux.) will keep things "in check". The cooler temps will also help.

thanks Al, thats kinda what I thought, Perhaps the dead cells will add to the nutrition of the Brett. Glad the weather has cooled off as well.

Yeah, growing up a starter of that as we speak. i used strictly Dupont yeast all summer so I could learn as much as I could from that strain. Finally tamed that beast!

Looking forward to the results your blend gives. Thanks again for sending it, I'll ship some final product of course.
