So about 8 weeks has passed since I last sampled this beer (4 months since Brett C innoculation). It now has a nice pellicle. The sample I pulled has a hint of funk in the aroma, along with the ton of fruit that was there last time. Taste is still sweetish, fruity upfront, and some roast in the finish.

AND THE GRAVITY IS STILL 1.040!!!

I like the beer, but it is still on the sweet side and quite viscous. I'm going to let it go until May (I need the Better Bottle carboy at that point for a Flanders Red), but this beer continues to amaze me.

Just wanted to say this beer won Best of Show at a competition in Calgary, AB this past weekend (240 entries).

The brett c never did drop the gravity, but it sure did give it some character.

I also added a note that brett C is a mild, english strain and mostly contributes fruity aroma.

I brought a bottle last night to an executive meeting for our homebrew club, and they all agreed it was mighty fine.
