How Long for a Starter
Hi-

About 5 days ago, I pitched the dregs of 2 Cantillons into about 1 quart of starter wort along with some yeast nutrient, but no aeration. Today, it smells sour and wonderful. There are sparse white colonies on the surface that look like lacto. There's also a center colony that looks more grey. At this point, the starter is actively growing.

My original plan was to step this up one or two more times and pitch it into 5 gallons of wort, so I get a good ferment going and then leave the beer alone for a year. How long should I expect this bugged starter to take before I can feed it again?

In my experience, the lower the pitch rate on your bugs, the more funk and sourness you'll get. Just something to keep in mind.
