Kriek needs souring...
I have a Kriek that smells amazing but is only tart, what's the best method to get this sour? Should I create a gallon starter of the same beer and ensure I have pedio or lacto in it? Beer has been sitting about a year and I just want it sour. I can also add dregs from a few Gueuze but don't know if that would help enough.

And the beer was at 1.003 from 1.055 before I added the cherries.

Sounds to me like it is what it is. Altering the flavor profile at this point may call for blending.
