I just waited longer betw gravity readings to make sure the funk was done. Like 1-2 months. I'd rather wait longer than have bottle bombs. A couple days seems too short for mixed fermentations with reg yeast and funk.

If you are doing a 100% brett brew, than a few days betw readings may be enough since performance seems to be different in those occasions.

In my case, the roselaire (single package, complete ferment) finished at about 1.013. The FG is partially dependent on acid generation since pH will shut the yeast and funk down. petec

Update on my Saison made with the Trappist blend. At 2 weeks the SG is 1.005. I fermente from 73-85F. The beer is spicy smelling and tasting, with some nice fruit. It is clearing well. The Brett. is working, I got a barnyard odor for a little while that is gone now. Going to let it sit a couple more weeks and check the gravity. I'll harvest the yeast for a Belgian pale ale next.
