Brett Cell Counts
Anyone have some solid numbers on maximum cell counts for brett propagated in wort? I see numbers like 120M CFU/mL in H. Martens's thesis, but there is not a lot of detail on the growth conditions.

Hey Baums... I'm currently propagating up 5 different strains of Brett. All started from a single colony.. into 100ml wort solution and now have been stepped up into 500mL.. A 5 fold step up can be standard. I have the cell counts but will need another week or so. I will have all data outlining how I stepped it up what method was used and daily cell counts with a pretty graph even. Looking to find the growth phase curve and what the optimal propagation method is.. Air/No air/shaken/still propagations...pH..temp ect.. Propagation has been a big issue with getting ferments to be even. I have switched focus some and am starting to focus heavily on propagation for Brettanomyces strains. I'll email you the results as they come in and get back to your email sorry I have been away and this is final week so everything has coming to a wrap.
