What to top a barrel off with?
I started a 60 gallon barrel with WLP655 Belgian Sour Mix September 2008. I'm going to pull about 10 gallon of beer from the barrel. When I top off the barrel can I just add wort or do I need to add fermented beer or does it matter?

I think it matters......

If you want bigger acidity and some mess to clean out later, I'd go wort.

If you want less mess and less acidity, I'd go finished beer (which will still acidify, just less so).

I was thinking less work and fermenters to clean by just topping off with wort. Even if I added fermented wort Via Saccharomyces cerevisiae the Brett in the barrel will start fermenting, though less vigorous. The bugs will need their time to. Either way, if I'm lucky November 2009 would would be the soonest I could draw off the barrel and top off again.

Adding wort to up acidity is not something I considered. Could be useful for me.
