Belgian Yeast for a Lower Gravity Mead?
Hi guys. I've been tossing around the idea of making a lower gravity mead using a Belgian yeast strain to ferment and try to make it come out around 6% abv. What would be your favorite strain to use that would make a tasty mead? Also, the last time Dan and I made a mead we used Ken Schramm's incremental O2 and nutrient addition method to turn out a 14.5% mead in 2 weeks. Would this be advised for any mead or just high gravity meads? Wasn't sure if a lower gravity mead would need this kind of treatment. Thanks!
