Temptation Dregs
So I just got a bottle of Temptation and I want to make a starter out of the dregs but how will I know what I am actually propagating? It says on the website that the conditioning yeast is Rockpile and some Brett. I really only want the Brett because Rockpile is a wine yeast. I want to make a funky Belgian Pale ale so would it be Ok to use the dregs with the Rockpile in it? I was going to use an Abbey yeast to start then pitch the some of the starter with the dregs in it and then some Pedio and Lacto. Will this be ok?

Matt, I would just dump the dregs of the bottle into your secondary of the Belgian Pale. I've used some Beatification dregs for a stout and it's coming along nicely. Even if there's live Sacc. in the bottle, it won't influence the beer to much of a degree as most of the simple sugars should be consumed and the Brett (and other bugs) will work on the unfermentables.

That depends on if you want sour or just funk. If you want a pure brett culture look elsewhere. Orval dregs work great for that. If you use the temptation dregs you will get acidity from the lacto and pedio as well as some brett funk.

Cool. I think I am going to use the dregs from the Temptation and the Consecration that I have and see what happens. I am also going to use Oak Chips soaked in Wine.
