Lambic Blending
It has now been 3+ years of me making the same lambic so I am ready to blend. Just don't want to mess it up, any advice? I have about 3 gallons of a 2006, and 5 gallons of 2007, and 6 gallons of 2008.

If it were me I'd start by blending ounces and sampling. Then messing up is fine, go to gallons when you feel you have it right.

When you are taking samples and deciding on a blend, avoid introducing tons of air into the containers and then waiting a week to actually bottle. lambics absolutely can get oxidized, which causes the beer to darken and develop an overripe apple and aldehyde character.
