Lambic Primary in 5.5g carboy
Got some WL Belgian Sour mix on the way and was wondering if I could pull off a full 5 gallon batch (kegging) in a 5.5g carboy? I do have ferm-cap S to control foaming, but do I really want to put that in to a year long lambic fermentation, or is that not a big deal, if needed? I am assuming that the blend is not a strongly active fermenter when used in primary.

Maybe this isn't the most ideal way to ferment your primary, but it seems appropriate if you have no other choice and I would agree that it doesn't seem that this would be an excessively vigorous fermentation.

Thats what I was thinking. I really just want to pull one off and leave it in the primary for 1.5 yrs or so, but I don't feel like buying another 6.5 gallon carboy. Maybe I'll buy myself another one for the holidaze!

Sure it will work. The foam control will harmlessly fall to the bottom once primary fermentation ends. I would still use a blowoff tube though, for insurance purposes.
