low gravity sour - What to do?
I just pulled a sample off a batch that I had intended for sour blending. I already blended about 1/2 gallon a couple months ago into a stout to excellent results. However, this sample was great by itself. Firmly acidic and a bit lemony, sort of a low gravity lambic.
So the question is do I keep it for blending or bottle it up as a session sour? What would you do? (I'm more interested in the answers to the second question.) |

I would bottle about half of it and use the remainder as your sour stash and keep feeding it beer so that you always have 5 gallons on hand to use for blending and every few years bottle some of it. That's what I do. |

Sean, if only I had the space for kegging :)
Cisco, that is what I'll likely do. I'll have to get in on the next round of the Bug Farm to keep the funk developing nicely. |
