Welcome to the homeBBBrew board!
Like the BBB, the homeBBBrew board is not a club, just a place to talk about making beer. Is there a swap you would like to see happen? If we can find a few others who have something similar then lets do it!

autolysis
Do wild beers with brett suffer from autolysis like beers made with saccharomyces? Or does the brett simply consume any destroyed yeast cells for nutrients?

Re: autolysis
I've read that Brett consumes the destroyed cells (cannot locate the source). Hopefully someone with a little more biological knowledge will share the specifics.

Re: autolysis
Not that this answers your question, but lambic type brews are often left on the yeast.

Re: autolysis
Yes, autolysis is not an issue if left on the dead sacch. It will become food for the brett.

Re: autolysis
I am assuming brett will first feed on any available unconsumed sugars left behind in the wort before scavenging any dead yeast cells. Reason why I ask, is I performed kind of a shitty rack into secondary carboy with my super saison and transferred way more yeast then usual. Pitched a tube of WLP BRETT b. into the carboy and had planned on letting it sit for a few months but didn't want any autolysis flavors/aromas. If need be, once the brett takes over, I can always rack into a keg for further aging to avoid long term contact with the sacch. yeast.
