Wit with Rosalare Yeast
I wanted to brew a wit but the homebrew shop was out of wit yeast. I had already milled my grain and I have the hops and spicing (citrus zest, corriander, chamomile). I really want to brew a wit bier or a wit like beer for the warm weather. What do people think about brewing the wit using WY Roselare yeast? Wits have a nice tartness to them and after starting to read Heironymus' new book Brewing With Wheat a few (usually traditional wits) had mixed fermentation.

Should I go for it, or wait?

Wait and get the proper yeast. The Roselare will take a long, long time to ferment and it will be no where's near being a wit.

It takes a long time. I tried that about 4 years ago... it was undrinkable for the first 6 months. OK at 9... and nice at about a year old.

As much as I love a good sour, I'm inclined to agree. Roeselare is a slow blend.

Thanks everyone. I have decided against it and will save the beer for another time. I am mashing in right now on a Dortmunder instead.
