Does The Recipe Matter?
With super-attenuation and all the unique flavors and aromas brought by the wild yeasts and bacteria, does the wort really make a big difference in the final product? Other than providing a certain amount of unfermentables that the wild yeast can feast on later in the progression.

It just seems that the recipe isn't out front in importance with these beers.

Yes and no. Like you said, it's not "out front". It's not the most important aspect of the beer, in fact, I don't believe it is in a clean beer either. I've always felt that process was of higher importance than recipe. That being said, it does play some role. Look at something like a Flanders Red vs a Lambic. They have similar bugs in them, sure much different ratios and whatnot, but the main players are the same, and yet the final beers are worlds apart.
