Culturing dregs from commercial Gose?
Hey all-

Just picked up some Leipziger Gose and have noticed that it is bottle conditioned with a healthy cake of yeast on the bottom of the bottles. Has anybody had success in culturing this stuff and recreating the beer?

Any thoughts as to recipe beyond the yeast and bugs?

I saved the bottle sediment from the same Gose. I will be adding wort to see if its lacto and yeast or just yeast. Anyone know if the Leipziger is pasteurized or not?

Got around to looking the beer up finally. I will be adding wort to my mason jar shortly to build up the culture.

According to "Brewing with Wheat" (p. 159-160), the lacto fermented portion of the wort is boiled before fermentation with the yeast, so you're very unlikely to find any living lacto in the bottle.
