Bugfarm IV and primary
Been loving Al's bugfarm and was thinking of maybe using it for a strong saison. I have been observing that the last few beers I did with this blend in primary (lambic, flanders red, sour blonde) have all had a noticeable sourness within 3 wks time or less in primary. If I pitched this in primary and cold-crashed after a few weeks and racked to a keg, would the pedio present continue to pump out diacetyl over time leading to a buttery brew, or would this be unlikely due to the cold-crashing slowing down the bacteria's metabolism?
